Black garlic is sometimes described as fermented garlic but it is actually made from standard garlic bulbs, slowly cooked until the cloves are black and almost treacly. Some passionate garlic people would actually say it is not garlic at all because the taste is so totally different. The flavour has been variously described as moist licorice, balsamic vinegar, richly umami, sweet and savoury, garlicky prunes, sweet and syrupy, tamarind, dark caramel, bitter and sweet. The answer is probably that you need to taste it yourself and decide.
The chemistry of black garlic
There are no bacteria or micro-organisms involved in making black garlic. It is actually produced by a form of slow cooking: a low, slow roast that involves a gradual breakdown of sugars over time. It is partly the heat denaturing the enzyme allinase and partly a Maillard reaction that causes a stream of chemical changes, producing dark brown and black clove colours, and the complex, sulphurous caramelised flavour. The Maillard reaction is a chemical reaction between an amino acid and a reducing sugar, usually requiring heat, and is a form of non-enzymatic browning.).
Our black garlic is produced using Australian purple garlic. There is nothing added to the garlic. It is "fermented" under strictly controlled conditions including temperature, humidity and time. The result is such that the individual garlic cloves change to a black colour - a little like a black jelly bean in appearance and texture. The flavour is no longer akin to the original raw garlic but rather a wonderful fusion of flavours similar to a combination of molasses, balsamic vinegar and liquorice.
Our fermentation do not involve nasty chemicals that may be on any produce that is not certified Australian organic.

Black Garlic also contains an additional very specific compound called S-Allyl cysteine (SAC) in very high concentrations, compared to White Garlic which is water soluble and thus absorbed easily within the body. S-Allyl cysteine has been shown to assist with the absorption of allicin. This makes Black Garlic much more effective than White Garlic for all the benefits mentioned above and additionally it is well tolerated by the digestive system so the chance of gastric distress is completely minimised.
